Avocado Chocolate Chip Cookies


Did you know that you can make chocolate chip cookies with avocado instead of butter?
When I read about the idea, it sounded so weird I knew I had to try it.
Just use one mashed avocado in place of one stick of butter in your favorite cookie recipe!
Although it imparts a slight greenish color to the cookies
and they are much heavier and more dense than standard cookies,
they are still delicious.

I wouldn't make this substitution if I were making the cookies for an event,
but to have for a family treat it's great!
We loved them!

Here is the recipe I used:
1 avocado, mashed until smooth
1/4 c. white sugar
1/2 c. brown sugar
1/2 t. baking soda
1/2 t. salt
1/2 t. vanilla
1 egg
1 2/3 c. flour
1/2 c. semi-sweet chocolate chips

Cream sugars and avocado together. Add baking soda, salt, and vanilla and mix until smooth. Stir in egg. Add flour and chocolate chips. Drop by spoonful onto a greased cookie sheet. Bake at 350 for 12-14 minutes, until beginning to turn golden brown.

I am so fortunate to have such an adorable helper in the kitchen.
He's my right-hand man.
And when did he get so big?!?
